The Scarlet Ibis rum was initially produced for exclusive use by the Death & Co bar in New York, and now available in available to the public in limited quantities as supplies last.
This rum is a blend of pot-still rums from Trinidad that were aged 3-5 years in white oak casks. The name is derived from the bright pink Scarlet Ibis bird, which is native to the Caribbean and adorns the bottle.

Nose is bland and vanilla… palate full at the beginning but with an end of spearmint.
The Scarlet Ibis from @hausalpenz is a blend of 3 and 5 year old Rum and is named after the National Bird of Trinidad.
49% ABV.
Appearance: 4/5 Golden Color
Taste: 3.5/5
Nose: Vanilla, caramel
Palate: Vanilla, wood flavor, honey
Overall: 3.5/5 - We enjoyed this rum however, with the 49 ABV we expected a little more. We will say this though, the price came in at 29.99 and for that this is a really good rum to use in a cocktail. Especially a Mai Tai.

Tasting notes indicate: Sweet!!! YUM!!!! This is a VERY delicious rum that does not taste like a bird. It is kinda warm.

Aromatic.
Flavors of fruit, vanilla, almond and ginger. So good!
Very young. Smooth with a subtle bite that is really enjoyable. No depth. No complexity. Light finish. This is indeed a good young rum. I just don’t like young rum. Not do I understand it fully. “Leave this in the damn barrel”. It is good enough to produce a real beauty in a few years!
Never saw this one in actual Trinidad.

Like a softer old santa teresa before they made the formula sweet. At 59% abv its surprisingly smooth
Tasted a year later and lowered the rating by 1, not sure if the batch changed but introduced a much mire bitter finish and a pepperminty element. Starts off of light vanilla unimposing and then suddenly changes gears to the bitter winterfresh vibe.
Bought this to use in a craft cocktail, but ended up enjoying as a sipper as well. Works neat or with a large ice cube. Will definitely purchase again.

The nose is quite light. .

A decent rum, that never really stood out for me. As my bottle is winding down, after having used it in cocktails for the past year or so - I find myself not having much to say about this rum one way or another. It's not bad - but it's not special.
