This is the best rum I ever had. It has a great caramel woody taste.

This rum is made by aging Dog Island silver rum for 9 or so months in casks that previously aged a porter beer and, prior to that, bourbon. The very short stint in the cask does nothing to smooth out the harsh heat or aniseptic properties of their silver rum, it essentially just serves to add an additional undesirable dimension to this rum. According to the distiller, they sent a sample to a sommelier to get a professional flavor profile - and the sommelier just sent back a handwritten note that simply read "this is not rum". Other than the fact this is a molasses based spirit, I'd have to agree. This rum essentially tastes like someone poured a splash of extremely bitter porter in a bottle of Bicardi. Perhaps it would appeal to the bitter beer lover, but I can't imagine it finding any followers in the rum world.
