The complexity of this addition to the Pilar portfolio is very nice. Maple on the nose with hints of vanilla. The flavor has offerings of dark chocolate and anise. The sweetness of the rum balances the higher proof offering a great mouth feel and smooth finish.
Whether you believe the backstory on this spirit or not, this one is quite the surprise. A nice nose and sweet pallet. Finishes with a smooth oak and caramel with a hint of apricot. I would recommend this to anyone who prefers matured complex rums neat or on the rocks. Too good to use for a mixer.
Right off the bat it smells like maple syrup. Has a very nice slightly sweet flavour.
I really enjoyed the Papas Dark and thought I would give this a try. The Sherry cask is a very nice touch. I would say better but different. Will be adding this to my ongoing collection.
If you can get your hands on this, do so. The price point is incredibly good and the rum is superior. Papa's is one of my favorites and this specialty item is a cut above. The aging in Sherry casks creates more complexity and a wonderful nose.
This one was available on my local liquor store shelf, and as cheap as I could find anywhere ($42), so I dove right in.
I haven't had the regular Papa's Pilar Dark, but this one is a real treat. It's pretty sweet, but has a depth and complexity of flavor that prevents it from becoming cloying. A little woody, lightly spicy, and with a slight, almost vinegary "twang" that sits well in my mouth, this blend's main flavor is maple, nuts, and dark fruit. Altogether, this makes for a decadent, desserty flavor that's a real treat after meals, with a smoke, or frankly anytime at all.
This was a pleasant surprise. A nice smell, a great sweetnes and a taste that stays in the mouth. I like the taste of Sherry. This is not bad at all.
I really like the Pilar line up. This one is solid.
This is a dark amber rum. It's very vanilla - ish but not overpowering. It also has a nice caramel and molasses flavor. Spicy.
Try to get a well lit shot from the front of the rum label

This rum reminds me somehow Metaxa 5 (brandy-cognac). Anyway Papas Pilar Sherry cask is fruity & a touch Sherry taste with a light cognac & port finish (unique combinations of aging barrels compeare to other aged rums). Also it is sweet with a pretty soft touch acid-sour but doesnt burn much. Good value for money & enjoynable!
