An unaged molasses spirit, distilled multiple times to strip out whatever flavors it might have originally had. Nothing here but neutral aniseptic flavor and a sharp heat. If they are dedicated to producing unaged and <1 year aged rums, Dog Island would do well to take a cue from Jamaican distillers and shift towards single pot cane based rums. At least then, their rums would offer some sort of character in cocktails other than heat and ethanol.
