Rum je vyroben z čisté šťávy cukrové třtiny odrůdy Cristalline v destilerii Chelo Michela Sajouse v Saint-Michel-de-l'Attalaye. Rum dozrával 5 let v dubových sudech po rumu Caroni.
Vyrobeno bylo 4700 lahví.
Aroma: Pronikavé, kysele zasmrádlé - lák od okurek, olivy, shnilé ovoce, stopa dezinfekce.
Chuť: Třtinová a lehce technická (benzínová).
Dozvuk: Třtina, sušené ovoce (výrazné meruňky a rozinky) a zlehka odeznívající techničnost.
Sladkost: 0/3
Ochutnán vzorek
Ve srovnání s Providence 2019 o dost lepší zážitek. Haiti atributy pěkně čitelné a Caroni techničnost vše hezky doplňuje. Škoda, že narozdíl od Providence nemám celou lahev.
Je tam poznat i Caroni. Příjemná technika na nose, s kukuřičným sirupem a fermentovaným ovocem, pepřem, estery, lehké teplé dřevo. Hodně zábavy. Podobné na nose s trochou zemitosti/plastelíny na patře.
Al naso mais, frutta tropicale fermentata, burro, formaggio,confettura di frutta, muffato, litchi, alghe. Al gusto pungente e intenso, molto aromatico con note di pepe, fermentato, frutta acida, vino muffato e vermouth bianco. Sul finale solvente e olio evo. Una vera sorpresa che si distingue e rispecchia l'animo Sajous

Tasted this aged Clairin at the Sweden Rumfest, May 2023.
It’s from Mr. Michel Sajous distillery Chelo and released by Velier and Mr Luca Gargano.
It’s made from cane syrup in pot still whereafter it’s tropical aged for 5 years in Ex-Caroni Cask.
The nose is complex, fruity and fresh with hints of pineapple, almond and honey.
At the palate it’s fresh, fruity and a little oily with hints of pineapple, banana, almond, honey, chocolate and sugar cane.
The finish is long, fruity and spicy with hints of sugar cane.
Overall a a very smooth and soft Clairin.
