Just The Right Balance Between Sweet & Spicy

On paper I should not like Bullion Rum because I’m not a huge fan of spiced rums, nor truth be told salted caramel. But this rum doesn’t offend me, in fact I’d say it’s quite nice, especially when mixed with Coca-Cola. The reason why I like this rum is because the salted caramel is sweet enough to satisfy my sugar craving. And maybe more importantly, the heat generated from whatever spices have been used to give this rum it’s kick, is not too searing. Drank neat I think this rum is just about tolerable. On the palate you get an instant hit of sweetness coming from the caramel, coupled with a slight warming sensation arising from the spices. But the alcohol burn is a tad excessive for my liking, that’s why I’m not overly keen on this rum neat. However it’s a different story when mixed with Coca-Cola. As a long drink this rum is a different animal. The Coca-Cola has two major impacts on Bullion. Firstly, it makes the caramel snap, making the rum taste even sweeter and more delicious. And secondly, the coke calms down the spices and the alcohol burn, making this rum much more enjoyable and indeed dangerously moreish.
