Surprise local rum distillery

Went to a micro distillery in a town I drove through on a family road trip. Locals kept mentioning the drinks they served and they hinted they might have some rum left that they distilled. When we got there the waitress said yes they have a bit left but no bottles as only a 184 get made and only half come to the restaurant cocktail bar. The rest sell out within a day. I was fortunate enough to get a glass of the rum. It was dark with a complex flavour with molasses and tobacco. I was confused as to how a local company got this flavour which is usually seen with aged carribeans. Nonetheless, great rum and get a bottle if you can.
