I'm not a huge fan of bourbon aged rums. I've tried a few a few good ones, where the aging is light, but generally I prefer other types of aging for rums, such as sherry or port barrel aging.
This smells and tastes of maple, bourbon, and vanilla. Definitely not bad, but I prefer their sherry aged rums a little better. However, I do prefer this to their blonde rum.
I stumbled on the bourbon barreled store pick Papas Pilar at a liquor store in Key West, just as the pandemic was beginning. I didn’t get to taste it until I got home but once I did, I was bummed that I hadn’t bought more than one bottle! Great for sipping, smooth, vanilla and brown sugar, with a nice boozy note. Both my wife and I loved it and ended up battling for the last sips. Searched for more online and finally found more of this limited version and bought several to last into the next year. Grab it if you find it!
Bourbon fans will love this. I have to confess, bourbon is NOT my favorite. I am a Scotch drinker. But this damn rum is unbelievable. Finally a good use for bourbon! Seriously, a really nice expression here. This is smooth, Smokey and complex. The nose is fabulous. The bourbon really adds big time. It isn’t in the background. This rum is full of bourbon notes. Not sweet. Not too strong. A Smooth, sipper. Memorable. Nice Smokey finish. This reflects art in distilling throughout. 9.5 for sure.

I’m glad to see that Papa Pilar brand is experimenting with extra aging like Ron Abuelo, Plantation, Foursquare and others. I think they are starting with the original dark Solara pancake syrup and the additional aging help. Still not a huge fan but great improvement.
