Zafra Master Reserve 21 is a premium rum distilled in Panama, at Las Cabras Distillery, by master blender Francisco "Don Pancho" Fernandez. The rum is made from molasses and aged in American bourbon barrels for at least 21 years.

I like the bottle. It has presence on the bar. What's inside tastes dry and smokey or woody. Not sweet. Not bad. Abuelo 12 is sweeter and also Panamanian
Very good rum by all standards, but just lacking a bit in complexity. Not cloying sweet or too dry, lacking in body but super easy drinking.
The nose is fragrant with some spice. When you swallow you definitely get a clear bourbon taste that only lasts for two seconds. The finish is long and very nice with flavors of vanilla and toffee. This would have probably been a perfect sipping rum if it weren't for the bourbon. On the other hand, this is maybe perfect for bourbon drinkers new to rum.
Aged? Hmm...
Surprised to see all those top ratings here... I expect more character and body in a spirit of that age.
Nose: Spicy, sharp, dry fruits
Palate: Sharp, some chili and also some oak, but disappointingly poor in flavour and a quite short aftertaste (there is some afterburn, but only little to no aftertaste).
Was expecting a little more and already with the bottle was under whelmed. Price Tag is beyond it’s appeal.
I know many people who enjoy this rum and see the reviews of same. I found this raisiny and a bit hot. For a sipper I’d never sip. If you like old mono, dos Madeira’s etc you’ll enjoy this. Similar flavor profile.
Not as smooth as my favorite rums with burn of my favorite bourbons. If I wanted bourbon I wouldn't be drinking rum!
Sweet nose, of molasses. Easy supper but no flavor on taste stands out for such an old rum. Almost watered down. Nice beginning but fades too fast.

Première dégustation de ce Zafra dont la description me donnait bien envie.
Au nez c'est très agréable et plutôt fruité avec des notes de coco, orange et banane. Mais une fois en bouche c'est une autre histoire, l'attaque est plutôt franche et l'alcool se fait légèrement sentir (c'est pas forcément une mauvaise chose) pour révéler les notes boisées du fût, le tabac et le cuir. Le vieillissement en fût de bourbon se révèle assez évidemment. Les notes fruitée sont toujours présentes mais en arrière plan. La finale légèrement tannique est assez courte vu l'âge. Content de l'avoir dans mon bar mais pas sûr qu'il y revienne une fois terminé, il lui manque quelque chose, un peu plus de personnalité et d'équilibre sans doute. Mais on reste sur du très bon rhum avec une belle complexité à explorer. A tester et à retester pour voir ce qu'il peut raconter d'autre !
