Zafra Master Reserve 21 is a premium rum distilled in Panama, at Las Cabras Distillery, by master blender Francisco "Don Pancho" Fernandez. The rum is made from molasses and aged in American bourbon barrels for at least 21 years.

Tastes likeva Demerara rum to me
Is smooth and has flavor
One of the better choice, taste good but my I like sweet types.
This is a very good rum which flows very softly and mild through your throat. It has marvelous tastes but is not as sweet as I like my rums! I had to let it breath for at least 20 minutes to be able to drink it neet and trying to enjoy it. It is a perfect rum, but I am not that professional yet to deal with it because of the strong burn and lack of sweetness.
Another one off the wish list; a shout out to wifey for grabbing me two bottles in South Beach.
This was on my list for years and I'll admit I had lofty expectations.
It reminds me of a cross between angostura 1824 and matusalem 15. Now I do like both of those but I guess I was expecting something different.
If I wanted to impress a buddy with an amazing 21 year old rum I would probably turn to appletons or el dorado before this one.
Still; this one is not without its charm.

Bottle An ordinary bottle
In the glass. A golden brown color that shimmers a bit of red. Smells of oak and spices but also brown sugar.
In the mouth Oak and pepper spices are the first to meet me. After a second the flavors of berries is produced . Complex!
Aftertaste Spices grabs in the aftertaste but when they have put themselves to bring up a little fruitiness up . A long aftertaste
Summary If you want a rum that is not sweet so is Zafra an excellent choice. I would imagine that it is ideal for medium strength cigar.
This rum I’ve gone back on forth on. I was very excited to try it and was a little disappointed with my first sip as it was much harsher than I anticipated for a rum at the price point and aging. That being said, once the bottle opened up a bit I found this to be quite great with an ice cube (I prefer rum neat however). A solid rum but for the price it’s not my favorite.
Due to the many reviews comparing this one to a bourbon, I was very hesitant to try it. Also, ever since finding out that Don Pancho was not the Master Distiller and that his name was only used to promote it, I was really turned off. His name is not even on my bottle, so that is very much telling.
I had planned on driving 40 miles to a well stocked rum bar to try it because I truly did not think that I would like it. However, between the dreaded thought of driving to the outskirts of a bad neighborhood and knowing that one just cannot judge a rum from one ounce at a bar, I picked up my own bottle this morning. Now if that first sip at a bar is terrible, then there is very little chance that the rest of the bottle will taste better.
This is a very dark rum that happens to be semi-dry with 15 gpl of added sugar (thanks to another reviewer for this info). The aroma is almost nothing. My first taste really impressed me, but later sips not so much, hence my rating of 7. I can't pinpoint the taste, but it is definitely not bourbon. If you want a rum that tastes a lot like bourbon, look no further than Porteno Solera 8 from Columbia. This Zafra is not even that close to a bourbon. All I can say is that this Zafra has a rich taste and after taste that is quite complex. I am glad that I bought this bottle, but at $49, my decision to buy another one will have to wait until this one finally gets finished off. It is good to know that it will last for more than 4 months due to it having less than 20 gpl of added sugar.
For those of you who like very strong and complex flavors to sip a few drops at a time neat, this one is for you. As for me, I have to enjoy it on the rocks to mellow things out. Mixing a rum that costs this much would be unthinkable.

Rum zraje systémem soleda v sudech po bourbonu. Na výsledný blend dohlíží master Ronero - Francisco "Don Pancho" Fernandez.
Aroma: Skořice, vanilka, sušené ovoce (rozinky), kůže, jemná zemitost.
Chuť: Skořice, mléčná čokoláda, hřebíček, karamel
Dozvuk: Vanilka s mléčnou čokoládou, spousta rozinek, sušených fíků a švestek.
Sladkost: 2/3
Ochutnán vzorek
Klasicky pohodová Panama s nepřehnanou sladkostí. V rumu je opravdu výrazně cítit sušené ovoce (naslepo jsem porto finiš).
