I first thought to myself, why not spice up a sweet aged rum? Then I asked, what could I eat with it. And, I did both.
4 oz. Kirk & Sweeney 18
Fresh cinnamon, nutmeg, allspice (5 rubs each on the grater)
1 twist of fresh cracked black pepper
1 tsp of brown sugar
8 oz Vanilla Coke
Mixed greens and tomatoes with a Jerk season oil and balsamic vinegar dressing
Slow roasted garlic and curry leg of lamb sliced paper thin
Baked sweet potato and cinnamon butter
Green and red bell peppers grilled with onions, olive oil, and a splash of Frank's Red Hot
Root beer float - Vanilla ice cream, root beer, and K&S 18 (x2)

Wow, black pepper added to a rum drink, that's a new/interesting one. Would be cool to hear if any restaurants out there have had rum or rum cocktail pairing suggestions with their menu options - like some restaurants have their wine courses.
