The magic that rye whiskey barrels have on rums
I was never a fan of rye whiskey, but a few companies have aged ordinary mixer rum in casks that formerly held rye whiskey. The results are like a magic wand was waved over the rum. These include Myer's Single Barrel, Papa's Pilar Legacy Edition 2021, and Bayou Single Barrel Select. Grander also produces one, but I have yet to try it.
Are there any chemists out there who can further explain what happens with this magic for rum in rye whiskey barrels?
