Honduran Artisan Rum - 'exotic' dark chocolate infused rum

I have a sweet tooth - we'll start there - and really enjoy Roatan Rum Company's Exotic Dark Chocolate infused rum. I'm not likely to return to Honduras before the bottle runs dry, and am looking to infuse something myself to replace it. I have the coca nibs and vanilla bean, and now I need a recommend on a smooth sipping rum that won't clash with where I'd like to go with this. Without ripping me a new one, please.

Chocolate infused rum sounds... if anything, interesting :) Maybe a smoother rum with slightly less taste/kick then others would work - like Zaya?
