What is the best rum to use to make rum cake? I love the Cuban-style rum cakes that I have had in Miami.

I guess it depends on how expensive a rum you would go for to make the cake. Flavor is also a key component in the equation of the what is? A light rum such as most Cuban runs provide subtle rum characteristics and a more mild flavor. A Demerara rum is a more full bodied, heavier rum due to the use of pot still distillation. A Jamaican rum is the quintessential whirlwind of flavor and FUNK. The Dunder used to create Jamaican style rums have a taste profile all to their own. Many rum drinkers don’t care for it, or it takes time to aquire the taste, similar to some scotch, especially from the Islay region of Scotland. Experiment and you will be able to decide which is best. Try baking cupcakes and use a different rum in each to be able to decipher which floats your boat or sinks your ship...so to speak!
