Batch #22, Finish: Unaged, 57% (114 proof)
Nose: Rubbing alcohol, Cotton Candy, Yellow Cake Batter
Taste: black pepper, creamy crème brûlée or vanilla custard, citrus zest
Overall: This one continued to evolve and really started to grow on me. Fun and good offering which makes me want to find some of the other finish options.

Bottle gifted by friend Buck. This batch #21/24 was finished in sherry and rye barrels to a final ABV of 56%. Pours dark reddish amber. Citrus orange aroma. Lots of heat to the mouth, but quite tolerable. Great leathery flavor. The rye really emerges. Upon a few drops of water, a pronounced brown sugar emerges. Mild chocolate finish.

Light agricole smell and initial taste but great caramel notes on taste with a slight bite and long burn. One of the better white rums I’ve tasted would rate more if it were smoother but definitely a collectors edition.

Being overproofed and this smooth is a testament to the process used to make this. The aged and oaked expressions are much more flavorful, however this is worth a spot in your collection.

I'm not usually a fan of over-proof rums, but this one could change my mind. It's very light on the nose, but full of flavor. Some burn, but not what you would expect for 120 proof. The rye barrel finish really comes out, and leaves you wanting more. On the rocks, this would pair well with a cigar.
