At first you must let this rum sit in the glass for 15-20 minutes. Certainly gains complexity on the nose and the mouth. Always a pleasure to enjoy and support Tar Heel state distilleries.

Kill Devil Pecan and Honey Rum is produced by Outer Banks Distilling which is located in Manteo on the Outer Banks of North Carolina. The pecans and honey used to create this rum are sourced from local producers near the distillery which I feel is a plus. I purchased 750ml for $30.00. This rum is bottled at 40%abv and is very cloudy which I have no qualms about as this surely intensifies the nice pecan flavor it has. I am no connoisseur, but to me the nose is predominately butterscotch and (you guessed it) pecan. The taste is similar with a nice added touch of honey on the finish which is pretty short. As another reviewer noted, letting this rum sit in the glass (as with most) for a few minutes really does improve the flavor and aroma. It also aids in reducing some of the alcoholic bite that this very young rum has. I prefer my spirits neat, but I think this would be very nice in a cup of coffee if that's your thing. This is a heavily "Pecaned" rum, so if you aren't a fan of pecans, you may want to give this one a pass. I really wish I could rate this rum higher since it is a local product, but I can't allow that to effect my judgment.

Being a fan of many honey whiskeys I expected something closer to those spirits but that is not the case. This was my first time to try this rum and so I drank it neat to learn more about it before attempting to do anything else with it. The honey and pecan are both present and distinctive but both are very mild. While it was enjoyable I did end up wishing it had more flavor. I agree with others here the rum tasted young but it improved after letting it sit out several minutes. When I reach for a flavored rum I will more often reach for something else except for rare occasion. I look forward to trying it in a few cocktails.
