9.00/10 Such an incredibly complex pour for only 2 years of aging. Beautiful young barreled rum that really shows what FS is about

Nose: First come synthetic aromas: a mix of good non-sweet bubble gum and dental pasta. There's a brief dried bamboo note then more persistent rosemary, dried basil, seasoned and seared cream dory fillet, and crackers dipped in honey. Sunflower seeds. The aromas are quite soft and light but not thin. It becomes more pleasant the more you spend time with it.

Palate: Definitely more powerful, beginning with a lovely sequence of herbed crackers, olive oil, and white wine. Brine that's balanced by a thread of sweetness, the kind you get from brie cheese. A summertime rum! There are also touches of melon, salted pineapples, and a firm note of white pepper.

Finish: Quite long, leaving the top of the tongue a little dry. Crisp, with sultanas, baked apples, and new wood.
