I had tried this one on the rocks at a football game years ago and swore to never touch this stuff again. Well, one should NEVER try any spiced rum the first time on the rocks since they were all blended to be mixers.
So, at yesterday's NFL playoff game, I saw this one at the bar and gave it one more try to be added with coke. Hey, this ain't so bad after all. I actually liked this very unique drink and I wound up ordering three double shots with coke over the course of the first three quarters. It also lubricated my throat so that I could contribute to the 107 decibels of noise that helped our team win. However, the next day it did a slight number on my system as well as showing a few pounds gained, so I won't buy a bottle for my cabinet at home.
This rum is so well blended that I you can't discern individual notes. Luckily I was able to pick the mind of the master blender, and with my chemistry background, really got into the talk of how it's made on a chemical level. The level of attention he put into it is incredible! Every last step was scrutinized with the eye of a research chemist. I can't wait for it to reach a wider distribution.
It's beyond incredible. It's so well blended and balanced. Straight it tastes amazing and in coke it tastes amazing. It's sweet but not over powering. I drink rum for the sweet, if I wanted dry-licking leather boots flavor I would drink scotches. The smell from the bottle is nothing interesting, it honestly smells exactly on the dot like Admiral Nelson's. In the glass it didn't do anything special either. It was much like any other rum, the oak-ethanol smell. Drinking it straight I was beyond surprised. Smooth isn't the word here. It comes in, says hello tongue and the tongue says hello back. They great each other shake hands and dance a little and down it goes. Where you get some spice from the pepper. Which is so ungodly fresh tasting it is mind boggling how that is possible. I am not talking kroger pepper here I mean the type you grow pick and eat yourself in the same day. That is how fresh tasting it is. In diet coke it is much the same, a very distinct flavor. Almost on the dot to sweet southern tea with some spice to it. The 20$ you pay for this is mind boggling. I have had my fair share of 15+ year old rums and they even at that age struggle getting their rum smooth. This is like something you could give to a mikes hard lemonade drinker and have them not even flinch from the alcohol. Yes it is that good. I don't think anyone will be beating/competing this rum's quality for at least a decade.

Bayou spiced rum is quite the hidden gem. With a generous flavor profile of vanilla, cinnamon, sweet praline, creme brule', and a light floral twist it is both delightful and surprising. It is what spiced rum should be, a blend of local spices and flavors with no single one gaining center stage over the others. This is a top fifty rum and with the ability to drink it over ice, may be the best spiced rum on the market. A must have for your liquor cabinet.
This rum is amazing for the price, a Jackson, it has replace my previous budget favorite, Flor De Cana 7 year. It's on the sweeter end of the rum spectrum, I probably wouldn't drink it with Pepsi, but with Coke it's fantastic. Extremely smooth, mellow vanilla tones, and great complimentary spices. It's even great on the rocks.
This rum has as much of a fruit background as a spice making a blend full of different flavors that us more than just a spiced rum. Not a sipper but one of the best mixers and blenders I have had with great balance. This is one of the great values I have seen recently and has a place in my bar, just wish I could get it locally.
Smooth and sweet. Different spices than what I've had in spiced rums before but very enjoyable. Good in cola or straight up.
This rum smells just like butterscotch candy. Hence I think it's more of a flavored rum than a spiced rum. However, the taste includes a good amount of spice. So I guess it can be considered a spiced rum as well.
While I'm generally not a huge fan of either flavored rums or spiced rums, this is perhaps the best of both I've ever tried. The butterscotch flavor goes very well with rum, and the spice is interesting too; it's not a fiery hot spice like the Old New Orleans Cajun Spiced Rum; it's more of a peppery spice.
This is a very impressive flavored/spiced rum. The best I've had of either!

It mixes really well with Coke. It's not too sweet, just well balanced.

This rum has a very light aroma to it but a warm vanilla body with a sweet finish. This will be pleasing in any way you'd like drink it
It`s a great rum for the budget minded rum drinker and it´s a mixing rum and goes well with coke for example. It`s a good rum but not premium. But it´s one of those that can be a very versatile rum, i bet it´s great in cooking and desserts for example.
I'm not going to leave a complex review of finishes and flavours because to be honest I mixed this with coke and ginger beer. Nice Rum, almost too easy to drink. Nice vanilla, banana, cinnamon flavours mixing with the Coke. I would stay away from Coke zero because it's way too sweet. I found it best with ginger beer.
This rum definitely has its place & that place is mixed with Coke. Not terribly enjoyable (to me, at least) on its own but the unique flavor profile lends itself well to mixing. If I’m in the mood for a Rum & Coke, it is my absolute go-to. Always keep some in the cabinet.

Compré una botella en Miami hace unos años. Un spiced en todo sentido, pero ni siquiera tan malo. Por lo menos mejor que Kraken o el Private Stock de Morgan. El problema es que parece ser que siempre se exceden con algún añadido.
Velmi silná infuze vanilky vám po celou dobu degustace natolik tlačí na čichové pohárky, až nakonec bohužel začne v hlavě nepříjemně těžknout. Monotematické však aroma rozhodně není, jelikož vanilku doprovází i mix koření, jehož finální projev bych přirovnal k vůni oblíbené dětské cukrovinky s názvem marshmallow (u nás „žužu“). V jemné a sladěné chuti se více soustředíte na ovocné tóny než 40% deklarovaného alkoholu, jež by dle mého tipoval málokdo. Podobně tedy jako u Bumbu či Plantation Pineapple shledávám Bayou spiced zajímavý a originální, celovečerní zábavu si však s tímto krokodýlem z Louisiany představit nedokážu. Barmani naopak zcela jistě zajásají nad cenově přijatelnou posilou do mix drinků a fandové infuzí posunou mé bodové hodnocení možná o stupínek či dva výše.
Is a spicied drink like liquer style not extreamly sweet but strange, you dont feel any sirius alcohol taste but also i dont feel it flavorful & it is like 1 years old rum maybe or half... to a woman maybe like this but not sure, just a bad style sweetness (maybe this is better for cocktails).
Bayou works very well with ginger beer and isn't bad on his own. It's reasonably priced rum hidden in classy bottle without disturbing unnatural flavours. Flavour of vanilla is prevailing with touches of cinnamon and spices. I can only recommed for a try.

Had a rum tasting on a sunny afternoon, because why not. Bayou Spiced Rum bottle and label design looks nice and unique. Light golden color from artificial flavoring. Strong alcohol and a plethora of artificial flavors to the nose and palate. Strong burn at the end. Barely mixable. I would skip this one for sure.
After trying Bayou Select (an 8 plus) I was disappointed by this ok rum overpowered by the taste of sweet cherry. I prefer spiced rums like Foursquare or Cruzan 8. As a person who drinks rum on-the-rocks, I will avoid this going forward although I will repurchase its older brother.
