If you drink this rum straight or in a rum-forward cocktail, it will really let you down. It tastes kind of sandy. I gave this rum a chance, but the only way to make it taste ok is by mixing it with coke. What I can say for it is, it doesn't taste bad in that artificial way that Captain Morgan does. It may be that the base rum isn't of great quality, but it also might just be an acquired or polarizing taste.
Ordered two bottles, this kind of rum is not my cup of tea :D But overal quality is very good.
Probably more like a 7.5 but i need to distinguish it from the other bayou which i prefer.

The first spiced rum I've had with a notably unique flavour profile. Vanilla and standard spiced flavours accented with prominent notes of cinnamon. Completely unique, complex, and of course, tasty.
Definite notes of carmel blended with a hint of banana and your typical spices. Fairy smooth and enjoyable
Maybe I am used to my own spiced rum (I made my own pimento dram) or a very good spiced rum like Chairman's Reserve, but this lacked "bite". It was good, just wanted it to be better.
Fantastic spiced rum. One of the best made in the US. Has a great nose of butterscotch and juicey fruit. One of the very best rum and cokes out there.
I wasn't big fan of spiced rum until this one. Love it with hot apple juice.
I had tried this one on the rocks at a football game years ago and swore to never touch this stuff again. Well, one should NEVER try any spiced rum the first time on the rocks since they were all blended to be mixers.
So, at yesterday's NFL playoff game, I saw this one at the bar and gave it one more try to be added with coke. Hey, this ain't so bad after all. I actually liked this very unique drink and I wound up ordering three double shots with coke over the course of the first three quarters. It also lubricated my throat so that I could contribute to the 107 decibels of noise that helped our team win. However, the next day it did a slight number on my system as well as showing a few pounds gained, so I won't buy a bottle for my cabinet at home.

I was happily impressed with this rum out of Louisiana. For a younger rum, it has a solid flavor. I had a hint of vanilla on the nose and palate with a light spice finish. It can be drank neat or over the rocks without an issue.
For an affordable every day drink, Bayou is a good choice.
