Ron Valdeflores is a handcrafted and organic rum made from pure sugar cane juice, grown in the mountains of the Sierra Madre de Oaxaca range. The fresh cane juice is fermented in steel tanks immediately after harvest and milling, using the natural yeast that occurs on the sugar cane. Characteristic of an ‘Agricole’ style of r(h)um is the earthy, vegetal aromas and flavours that are preserved after distillation. The type of cane and even the type of soil used, will greatly influence the outcome of the final product. After distillation in handmade, stainless steel Alembic-type pot stills the spirit is matured between 3 to 5 years on first-use & only slightly charred American oak barrels before bottling. Pangea Spirits, the company behind the product is also responsible for the acclaimed Los Siete Misterios brand of Mezcal, and their dedication to supporting small traditional farmers and distillers is equally represented with Ron Valdeflores.
Valdeflores 3 años has benefited greatly from the extra maturation time. Retaining the zesty fruitiness of her younger sister, while developing an elegant nutty sweetness. A more well rounded drink, whether you take it pure, with a few drops of cold water or why not a spicy ginger beer?
