Ron Valdeflores is a handcrafted and organic rum made from pure sugar cane juice, grown in the mountains of the Sierra Madre de Oaxaca range. The fresh cane juice is fermented in steel tanks immediately after harvest and milling, using the natural yeast that occurs on the sugar cane. Characteristic of an ‘Agricole’ style of r(h)um is the earthy, vegetal aromas and flavours that are preserved after distillation. The type of cane and even the type of soil used, will greatly influence the outcome of the final product. After distillation in handmade, stainless steel Alembic-type pot stills the spirit is matured between 6 to 18 months on first-use & only slightly charred American oak barrels before bottling. Pangea Spirits, the company behind the product is also responsible for the acclaimed Los Siete Misterios brand of Mezcal, and their dedication to supporting small traditional farmers and distillers is equally represented with Ron Valdeflores.
The Blanco expression carries an impressive body and complex flavour profile that tickles every part of your tongue, from savoury to sweet, from astringent to pungent. Not a bad sipper, but also performs excellently in a mix with tropical juices, without losing its character.

Finish: Warm, long finish. Somehow both slightly sweet and dry wood tannins on the back pallet.

Overall: Surprisingly complex for such a young spirit. Subtle woodnotes that boosts the vegetal qualities instead of tasting like antiques. Highly recommended!

It's criminal that Valdeflores isn't more available.
Great balance of bamboo/fresh cane, slate/minerality, fruit, and just a touch of spice.
Oak has mellowed out the palate a little, but not enough to kill the freshness from the raw spirit.
